Shrimp & Avacado Salad
This is a great salad for a warm summer day. As you know I am a sucker for anything with cilantro, avocado, lime or shrimp so this is a home run. My husband didn't put it on salad and ate it as a salsa so that's an option too:)
Shrimp & Avocado Salad
makes 4 salads
1 pound jumbo cooked shrimp, peeled and deveined, chopped
2 med. tomatoes, seeded and diced
1 large avocado, diced
1 jalapeno, seeded and diced
2 limes for juice and zest
1/4 small red onion, diced
1/4 cucumber, peeled and diced
1 tablespoon olive oil
1 tablespoon fresh cilantro, chopped
Salt and Pepper to taste
2 small romaine lettuce heads, washed dried and chopped
In a small bowl combine jalapeno, lime juice and zest, red onion, cucumber and oil. Let sit at least 5 min. Add shrimp, tomatoes, salt and pepper. Just before serving add cilantro and avocado. Combine. Serve over lettuce. Drizzle some of the juice from the mixture as the dressing.
